Update and a few pesky details

Yes, I know, this update has been a long time coming. There are a lot of things I *could* say, but I won’t. Onward and upward!

I have a lot of things planned in the upcoming weeks, so you’ll just have to stay tuned and see. I’ve been trying out some new (to me) products, and a few interesting dietary tweaks. Gotta love being your own N=1 experiment, right?

First of all, I want to start off with a few points of note. I’m going to be doing some product reviews. At this time, NONE of the products I am reviewing have been given to me with the sole purpose of writing a review. Everything I review has been purchased by me, for personal use. So when I give my opinion, there are no incentives, freebies, or any monetary consideration. I’ll let you know if/when that changes.

Second, although I am a Certified Holistic Health Coach, I am not a doctor, registered dietician, or other licensed health professional. You should always check with your physician and seek medical assistance for any specific health conditions.

Now for the update. I know you’ve been on pins and needles, reading this far! I’m still doing my “Couch to 5K” program, albeit more slowly than I’d hoped. Still, any progress is good progress, and for that I’m grateful. I’m still hoping to complete my first 5k this summer, and the Dempsey Challenge 10K in October.

The weather’s been fabulous here, unseasonably warm and all the snow has melted. I’m struggling a little to get my schedule and my running coordinated. That’s going to be a work in progress, I think.

I recently purchased a grill — I am woman, hear me roar! Or maybe just squawk loudly? I’ve managed to cook a few things on it now, which is kinda cool. Right now I’ve got asparagus and salmon. Looking forward to seeing how it turns out.

Off the couch and into a new adventure

It’s been a while since I’ve dusted off my blog. Sorry about that! Real life and unexpected life changes have hit me hard the last couple of years. Darn it, I’m hitting back!

A few updates on me to start. First of all, I am now a Certified Health Coach. Whoohoo! That’s a whole blog post in and of itself!

Second, I have made my way to a Paleo/Primal food-style. It just makes sense. I started with eliminating wheat and gluten, whittled down to no grains, then began ticking other items off my list one by one. I’ve watched my health slowly improve with each change, and my body is loving it! More on that later.

Last, and the purpose of my post, I have committed to running a 10K in October, to support The Patrick Dempsey Center for Cancer Hope & Healing. Here’s a link to my Dempsey Challenge Webpage, if you’d like to read more. Yes, it’s a fundraiser. I’d love it if you felt compelled to support my efforts. However, that’s not *why* I’m doing this.

To that end, I’ve started a Couch to 5K running program. I don’t know if it’s the “official” one or not; it’s an app on my iPhone that has weekly workouts. It takes you from minimal running, alternating with walking the first week, gradually building you up to running for a full 20 minutes. From there, it’s all building distance, baby!

I have two fabulous friends helping me (read: dragging me kicking and screaming). I couldn’t do it without them. The encouragement, support, and rump-kicking are priceless.

In the midst of today’s workout, Week 1 Day 3, the notion of blogging my experience was thrown at me. I accept the challenge. You can come along for the ride, if you wish. I’m not rich (yet), famous (also yet), or anything but an ordinary single mom trying to set a great example for her kids and have something to accomplish in the long (no pun intended) run.

Ghee, it’s nice to meet you

When I was growing up, margarine was the “in” thing. Luckily, my mother had other ideas. She always used real butter, and in liberal amounts. I have fond memories of noodles with butter and garlic, toasted sourdough bread with butter, and popcorn that was air-popped, with melted butter on top.

I was introduced to Ghee through Pure Indian Foods, via Kelly the Kitchen Kop’s Blog. I entered the giveaway, didn’t win, but took advantage of a special deal to give their Grass-fed Organic Ghee a try.

As a fan of butter to begin with, let me tell you, I LOVE ghee. I cracked open that jar, scooped out a teensy bit, and tasted it. It has a smooth, buttery flavor, almost nutty. The texture is a little more grainy than butter, but I guess that is to be expected without the milk solids.

My first test of the ghee was breakfast. Instead of my beloved bacon grease, I used a dollop of ghee in my skillet. After adding two organic, free range eggs (from a local farm, of course), and a splash of real cream, my breakfast scrambled beautifully in the pan. I loved being able to have the pan at a medium heat without worry that the butter would brown or oxidize. Ghee is definitely an excellent item for healthful frying!

Next came the taste-test on steamed veggies. We like to grill on Sundays when possible, and I usually fix a side of broccoli, cauliflower, or mixed organic vegetables to go with. As soon as the broc was cooked, I slipped some ghee in the bowl and mixed it all around. After all, the vitamins in broccoli are fat-soluble, and what better way to help the body assimilate them? Yum!

I have since managed to incorporate ghee in many little ways. The butter in my freezer will just have to stay there a little longer.

I thought I would put the obligatory welcome post up, while I am working on a few posts for my blog content.

One thing I am hoping to do is share my Real Food journey. I had one of those “ah ha” moments, more of which I will share soon, that got me started on this path.
